Pão de Queijo from Minas



  • 4 cups tapioca flour
  • 2 cups whole milk
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 cups shredded aged cheddar
  • Salt to taste

Preheat oven to 180°C (356°F). Set aside a baking sheet greased with oil.

Mix oil and milk into a saucepan, bring to boil.

In a bowl, mix the hot oil and milk with the tapioca flour. Using a spoon mix thoroughly, let mixture cool.

Once cooled bring the cheese and eggs, mix until integrated, roll into small balls and lay the balls on the baking sheet. Cook in the oven for approximately 30 minutes or until light brown.
